the basics
— makes a lot of pickled onions, which you can store for pretty much ever in the fridge
— takes 10 minutes
the ingredients
— red onion | 1, thinly sliced
— garlic | 1 clove, peeled
— white vinegar | 1 cup
— white sugar | 3 tbs
— black peppercorns | 1 tsp
the process
— put onions and garlic in a glass container or jar and set aside
— in a small sauce pan over medium heat, combine vinegar, sugar, and peppercorns and bring to a boil
— once mixture is boiling, pour it over the onions and garlic
— allow to cool and store covered in the fridge

— ok I don’t actually know exactly how long you can keep them for but I know I’ve eaten them over the course of a month and I’m still alive so feel free to do more research on that
