the ingredients
— flour | 2 cups
— sugar | 2 cups
— unsweetened cocoa powder | 3/4 cup
— baking powder | 2 tsp
— baking soda | 1 1/2 tsp
— salt | 1 tsp
— espresso powder | 1 tsp
— buttermilk | 1 cup
— vegetable oil | 1/2 cup
— eggs | 2
— vanilla extract | 1 tbs
— boiling water | 1 cup

the process
— preheat oven to 350 and butter & flour three 8-inch cake pans
— in a medium bowl, combine flour, sugar, cocoa, baking powder, baking soda, salt, and espresso powder
— separately, in a large bowl, mix buttermilk, oil, eggs, and vanilla
— before adding your dry ingredients, start boiling your water so it’s ready to go
— gradually beat flour mixture into the wet ingredients until combined
— reduce mixer speed and slowly add the boiling water
— evenly divide batter into your pans and bake for 25-30 minutes or until a toothpick comes out cleanly
— immediately cover the pans loosely with foil and cool in the freezer for half an hour
— this is a good time to make your frosting
— after half an hour, remove cakes from pans and allow to cool fully before frosting
— frost generously with chocolate buttercream
