the basics

— makes more than enough to cover a three layer cake

the ingredients

— cream cheese | 16 oz, softened at room temp

— butter | 2/3 cup, softened at room temp

— powdered sugar | 6 cups

— vanilla extract | 2 tbs

the process

— in a large bowl, whip cream cheese and butter until very light and fluffy, about 8 minutes

— gradually whip in powdered sugar, tasting when you get close to the end to make sure it’s not getting too sweet

— whip in vanilla extract, and continue to whip until light and fluffy, about another 2 minutes

— gluten free until you put it on a cake

— not dairy free ever
