the basics
— makes more than enough to cover a three layer cake

the ingredients
— butter | 1 1/2 cups (3 sticks), softened at room temp
— unsweetened cocoa | 1 cup
— powdered sugar | 5 cups
— milk | 1/2 cup
— vanilla extract | 1 tbs
— espresso powder | 1/2 tsp

the process
— in a large bowl, whip butter until very light and fluffy, about 8 minutes
— gradually sift and whip in powdered sugar and cocoa, alternating in five batches, adding milk as needed to keep it moving
— slowly add the rest of the milk, then whip in vanilla and espresso powder
— continue to whip until it’s as light and fluffy as you want it (I usually go for another minute or two)

— gluten free until you put it on a cake
