avgolemono chicken & rice soup

the basics

— makes approx. 4 cups

— takes 3-4 hours (10 mins to prep, a few hours to simmer)


the ingredients

— chicken carcass | 1 whole, or bones from 4-5 lbs. of chicken parts

— celery | 2 stalks, in large chunks

— carrots | 2, in large chunks

— onion | 1, quartered

— parsley | 1 small bunch

— bouillon cubes | 2

— salt | 1 tbs

the process

— in a large stockpot, add all ingredients and fill with water

— bring to a boil then reduce the heat to low and let simmer away for 3-5 hours until reduced to about 4 cups of liquid and it smells too damn good
