the basics
— makes 2 bowls
— takes 10-40 mins depending on what you’ve made in advance
the ingredients
— basmati rice w aromatics | 1 recipe, made without ginger
— almost hummus | 1 recipe
— pickled red onions | a couple tbs
— quickles | about 1/2 recipe
— lettuce | 1/2 cup if ya have it
I usually don’t buy lettuce specifically for the bowl, but I’ll throw it in there if I have it around
— roast chicken or lamb, simple pulled chicken, or whatever protein you have | about 1/4 recipe of the roast chicken or lamb or 1/2 recipe of the pulled chicken
— crispy chickpeas | 1/4 cup
— feta | a couple tbs, crumbled
the process
— if you haven’t already, make your picked red onions and quickles
— then, get your rice and protein going
— while the rice is simmering, make your almost hummus
— once all of the components are ready, build your bowls with your rice as the base and everything else piled on top

— to make dairy free, skip the feta and replace the butter in the chicken/lamb marinade and the rice with more olive oil
