This one’s Asian-ish. Here’s the rundown:

the menu

night one: honey sriracha salmon, sushi rice, crunchy asian salad with that sushi restaurant dressing

day two: crunchy asian salad with pulled chicken & that sushi restaurant dressing

night two: salmon fried rice w an egg on top

night three: chicken quinoa bowl w an egg on top

the shopping list

average cost for two people = $80 total, $10.00 per person per meal for four meals each

produce

  • 1 head of garlic

  • 3 hearts romaine lettuce

  • 2 cups any color cabbage

  • 1 english cucumber

  • 1 pint cherry tomatoes

  • 1 white or yellow onion

  • 1 1/2 cups shredded carrots

  • 1 red bell pepper

  • 4 thumbs ginger

  • 1 lemon

meat & dairy

  • 1 lb salmon (1 big piece or 4 filets)

  • 1 lb boneless & skinless chicken breasts (about 2 big ones)

  • 4 eggs

non-perishables

  • 5 tbs vegetable or canola oil

  • 8 tbs sriracha

  • 3/4 cup tamari or soy sauce

  • 5 tbs agave or honey

  • 1 cup unseasoned rice vinegar

  • 1 tbs fish sauce

  • 2 tbs sesame oil

  • 5 tbs sesame seeds

  • 2 cups sushi rice

  • 1/4 cup sugar

  • 1/2 cup peanut oil

  • 2 tbs ketchup

  • 1/2 cup sliced almonds

frozen

  • 1 cup frozen broccoli

  • 1 cup frozen pre-cooked quinoa

booze

  • ok so none of these recipes actually require alcohol, but I’d pick some up anyway as long as you’re there

  • parchment paper for your salmon

the to-do list

night one

On the first night, as is customary with my collections, you’ll do the bulk of the work. I like to plan for night one to fall on a weekend so you have time to prep.

You’ll make the honey sriracha salmon, sushi rice, the crunchy Asian salad, and that sushi restaurant dressing (the addictive & impossibly orange one).

For dinner, you’ll share 1/4 of the salmon, 1/2 of the sushi rice, and 1/2 of the salad and dressing.

When portioning dinner, only dress the half of the salad you’re eating on night one. That’ll keep your lettuce from wilting. Wilted romaine is #sad.

day two

You’ll share the other half of your crunchy Asian salad and dressing for lunch on the second day. You’ll also make some easy pulled chicken and add half (a quarter each) to your salads.

night two

That night, you’ll transform your leftover rice and salmon into salmon fried rice with an egg on top. It is my personal belief that, much like melted better, a runny egg yolk makes anything better.

night three

Finally, you’ll share the rest of your chicken and some quinoa to make easy chicken quinoa bowls. You’ll top them off with another fried egg because I am nothing if not consistent.

That’s it! Once you’re done with night three, sit back and relax while you edit your pics of ridiculously photogenic salmon.
